What Makes Raw Honey Different?

Raw honey is honey exactly as the bees make it — extracted from the comb, lightly strained to remove wax and debris, and bottled without heat treatment. It is never pasteurised and never ultra-filtered. That single decision is what separates a living, golden food from the flavourless syrup that lines most supermarket shelves.

Mass-market honey is usually heated to high temperatures so it pours faster on production lines and resists crystallising on the shelf. It is then forced through fine filters that strip out the pollen, the tiny wax particles and many of the natural enzymes. What is left looks clear and lasts a long time, but it has lost much of the character and nutritional value that made honey special in the first place. Some cheap blends are even cut with rice or corn syrup — a practice known as honey fraud that costs shoppers dearly and undercuts honest producers.

Storing & Enjoying Your Honey

Keep your jar in a cool cupboard with the lid firmly on — there is no need to refrigerate it. If your raw honey crystallises and turns grainy or solid over time, that is a natural sign of quality, not spoilage. Simply stand the jar in a bowl of warm (not boiling) water and stir gently until it loosens again. Stir it into warm porridge, drizzle it over yoghurt, pair it with strong cheese, or take a spoonful straight from the jar. A small note of caution: honey should never be given to infants under twelve months of age.
